Shape Retention

The polyester element helps the fabric maintain its shape over time..  That allows the shirt to return back to its original shape every time it's pulled fresh out of your drawer.  This helps with sleeves, necklines, and waist openings. 

Wrinkle Resistance

A poly cotton blend shirt will resist wrinkles.  A good example is sitting in your car.  Your back against the seat causes wrinkles in the fabric.  As you move, those wrinkles release from body heat keeping that shirt looking clean.  On top of that, it's much quicker to steam to a wrinkle free state than a 100% cotton shirt.

How does a poly cotton t-shirt fit compared to a 100% cotton option?

My opinion on this, having worn both shirts for the last 14 years.  The poly cotton shirt will "give you more of a hug" than the 100% cotton shirt will.  The patterns are the same, the cuts are the same.  The polyester element gives more stretch and rebound which pulls slightly closer to the body giving more of a fitted look.
